Australia, Erin-Style


Ted's barbequed lamb was a tough act to follow. I haven't seen him that serious in the kitchen since we first started dating! But my Dinkum Chili and Lamington dessert gave him a run for his money...

Dinkum Chili was a strategic choice on my part. Ted loves chili. And this Australian version is packed with beef and pork (including bacon!) and conveniently does not call for beans. I knew I had a winner on my hands.

My favorite part about this recipe is that it includes a lot of ground chili to give it spice, plus a hint of brown sugar to add some sweet and to balance the heat. My least favorite part about this recipe is that it calls for two cans of Australian beer. I must have been quite a sight wheeling Henry into the liquor store with my big pregnant belly pointing the way to the beer cooler, and slapping a 40 ounce can of Foster's on the counter. I felt compelled to tell the cashier that the beer was not for me, to which he mumbled, "Sure thing." He then put the can in a short brown paper bag, the kind you see bums on park benches sipping out of. It might be a while before I'm brave enough to show my face in that liquor store again.

I concluded my Australian meal with the traditional dessert, Lamingtons. These are buttery sponge cake squares, coated with chocolate icing and rolled in coconut. I am not much of a baker, but still found these simple to make. They were absolutely decadent.

Ted had three helpings of Dinkum and let out a huge "hmmmmm" when he took his first bite of Lamington cake. But when it came down to rating time, we both agreed that this meal also scored a 4.0.

It was a draw!
