I am a little nervous about tonight's dinner; Estonian Stuffed Veal Roll. I was close to chickening out on Estonia all together and opting for baking a rye bread that is a common to this Northern European nation. The entree recipes I found called for pig's knuckles and herring and had the prefix "jellied". My stomach is feeling a little weaker than normal and I just don't think I can handle those ingredients. So I searched and searched until I found something that still said "Estonia" but sounded a little more palatable. Tonight I prepare veal stuffed with ground veal. Still doesn't sound extremeley appetizing, but we'll soon find out...
