Breakfast Bread from Dominica

Dominica, not to be confused with the Domincan Republic (which is up next), is a small island nation in the Caribbean Sea.  I was thrilled to find that the country has a very unique national dish. But, my excitement was quickly thwarted when I realized there was no chance I'd be able to prepare it...

Mountain Chicken is the local delicacy in Dominica, also known as "crapaud".  The Mountain Chicken is not a chicken at all, but a very large frog.  The frog can weigh up to 21 pounds and it's legs are big and meaty.  Mountain Chicken is impossible to get in the United States.  And more, the Mountain Chicken population has decreased so dramatically in the past ten years that the species might be close to facing extinction.  So, no Mountain Chicken for the Keysors.

I decided to bake instead.  Banana Mango Bread is popular in Dominica, and now I know why.  I have never made bread from scratch before, and didn't realized how easy it could be.  Pureed mango, mashed banana, brown sugar, golden raisins and chopped walnuts gave the bread the perfect sweetness and a nice texture.  I intended to make the bread for dessert, but have been eating it for breakfast all week.  Thumbs up to Dominica! 3.0.
