When In Doubt, Go With the Fish


I'm starting to learn that when I need to make up for a few botched meals, selecting a fish main course is the way to go. I was feeling slightly defeated on Tuesday, so cautiously chose a very simple "Chadian Fried Fish" recipe to cook that evening. To balance it with something a little out of the ordinary for Ted and me, I also cooked zucchini with crushed peanuts as a side dish. And of course, rice!

As a side note, I was just commenting to a friend that in three short months I have managed to convert myself into a rice lover. My craving for a delicious creamy Yukon mashed or crispy oven fried Red Bliss has gone by the wayside. Who would have guessed?

The fish was a light, mild Tilapia with slivers of garlic tucked into the flesh. I coated the filets in flour and fried them in oil until brown, then let them simmer in just a touch of water with tomato wedges and a little salt and pepper. The zucchini was peeled and cubed, then simmered in a pan until soft. I added garlic, lemon juice, a splash of olive oil, salt and pepper. The recipe called for mashing the squash, but I opted for giving them just a slight press with a fork before sprinkling them with the toasted crushed peanuts.

It was a great dinner, as evidenced by the lack of leftovers. I cleared the plates feeling satisfied, confident, and excited to tackle the two biggies I have coming up next - Chile, and then China!

Chad scored a 3.25. This is a recipe I would make any given night of the week, and it will never disappoint.
