When I think about a vacation I envision turquoise water, a cloudless sky, white sand, and no one else in sight but my husband. Oh, and maybe a waiter bringing my beverage of choice. Although I have never been there, Fiji is my destination when I take this perfect vacation in my mind.
When I first started Have Kitchen, my goal was to determine our 5 year anniversary trip based on the highest-rated country. We celebrated that landmark back in June with little fanfare, but with the grand intent of jet setting to Europe sometime in 2012 for a belated celebration. So, regardless of how high Fiji's meal might score on the Keysor food-rating scale, there is little hope of me making it there in person anytime soon.
I'm hoping you will help me pick my Fijian recipe. In my research, two dishes have stood out. Kokoda is a ceviche made with mahi-mahi, and is arguably the nation's most famous dish. Fijian Curry is proof of the Indian influence on the country's cuisine. Their curry is typically made with lamb or goat, but chicken or beef could be substituted. I would use lamb assuming I am able to find a nice cut at the market.
